Cut the fennel tubers and chicken fillets into strips.

Put the fennel and chicken with the water, the tarragon and chicken stock in a large pan and bring to a boil.

Allow to cook for 12 minutes on medium heat.

Meanwhile, put the bean mix in a colander and rinse under cold running water.

Grate the yellow skin of the lemon. Cut the fruit into pieces.

Add the beans and spinach to the soup the last minute of the cooking time.

Season the soup with pepper and salt. Garnish with the lemon zest and a lemon wedge.
