Directions

  1. Knead the beef or minced lamb with meatballs, herbs, sesame seeds, coriander, red onion and the egg. If necessary, mix some breadcrumbs to make the minced meat less sticky.
  2. Form 8 elongated balls of the mince and thread them on skewers. Press them a little flatter and let stiffen in the refrigerator for at least 1 hour.
  3. Stick a piece of peeled and blanched winter carrot and 1/2 shallot on both sides of the skewers.
  4. Brush the skewers lightly with oil and grill for about 4 minutes per side until done.
