Knead the beef or minced lamb with meatballs, herbs, sesame seeds, coriander, red onion and the egg. If necessary, mix some breadcrumbs to make the minced meat less sticky.

Form 8 elongated balls of the mince and thread them on skewers. Press them a little flatter and let stiffen in the refrigerator for at least 1 hour.

Stick a piece of peeled and blanched winter carrot and 1/2 shallot on both sides of the skewers.

Brush the skewers lightly with oil and grill for about 4 minutes per side until done.
