Knead the mince with the onion, cumin, paprika, cayenne, salt and 1 tablespoon of olive oil. Form small balls with moist hands.

Heat the rest of the oil in a large frying pan and fry the meatballs in 7-8 minutes around golden brown and almost done.

Prepare the couscous according to the instructions on the package.

Break the eggs between the meatballs in the pan so that the yolks remain intact. Bake until the egg white is solidified and the yolks are still soft.

Sprinkle the minced meat dish with the parsley and serve with the couscous.
