Melon tartar with cucumber and mint

Remove the seeds and skin from the melon.

Cut the flesh of the melon into tiny cubes.

Wash the cucumber and cut it in quarters lengthwise.

Remove the soft part with the seeds.
-
Cut the rest with skin and already in tiny blocks.

Stir in the mascarpone and mix with the cucumber.
-
Mix the olive oil, the lime juice, some salt and a lot of freshly ground pepper.
-
Then carefully mix the melon cubes.
-
Make a mountain of melon tartar on each plate with the help of a plug or a bowl.

Garnish generously with the mint leaves.
