Rub the fondue pan with the garlic. Pour the beer in the pan and heat to the boil.

At a slightly lower level add the cheddar and cream cheese stirring in portions and stirring until the cheese has melted.

Tie the fondue with diluted cornstarch.

Stir in the pepper, cumin and coriander.

Serve the fondue for example with rolls of tortilla wraps, small corncobs (tin), tortilla chips, wedges of avocado and bars of red and yellow peppers.
