Mexican fish

A nice mexican recipe. The main course contains the following ingredients: fish, white rice, olive oil, Mexican wok vegetables (750 g, frozen), ground cumin (djinten), tomato cubes (400 g), coal fish fillet (400 g, frozen) and dried mint.

Directions

  1. Boil the rice according to the instructions on the package.
  2. In the meantime, heat the oil in a skillet and fry the frozen wok vegetables for 5 minutes on a high heat until they are al dente and the moisture has evaporated. Add the cumin and cook for another 1 min.
  3. Add the tomatoes and bring to the boil. Turn down the heat and place the frozen fish in the pan. Cook with the lid on the pan in 8-10 min. Until done. Sprinkle with fresh mint and pepper and salt to taste.
  4. Divide the rice over 4 plates and serve with the fish and vegetables.
