Directions

  1. Boil the rice according to the instructions on the package and allow to cool.
  2. Meanwhile, beat a dressing of the lime juice, the sunflower oil, cumin powder and half the coriander.
  3. Mix the red onion, beans and the dressing with the rice and season with salt and pepper.
  4. Place the leaves of lettuce on the bottom of a trifle dish or large glasses. Spoon the bean rice on it. Put the slices of tomato on them, then the corn and then the avocado.
  5. Mix the sour cream with 2 tablespoons of water, stir in the rest of the coriander and season with salt and pepper. Drizzle the salad with this creamy dressing.
