Mexican meal soup of sweet potato with kidney beans


Soup of fresh package sweet potato with grilled peppers, kidney beans and crème fraiche.

Directions

  1. Prepare the sweet potato soup according to the instructions on the package (but do not leave it sprinkled with oil at the end).
  2. Add the water. Let the grilled paprika drain, but catch the moisture and add to the soup.
  3. Cut the peppers into strips and let the kidney beans drain. Add the peppers and kidney beans when the soup is pureed.
  4. Let the soup simmer for 3 minutes. Serve in deep plates or bowls and scoop 1 tbsp crème fraiche in each bowl.
