Boil the eggs in boiling water for 5 minutes. The eggs must be soft.

Put the butter in a pan with a thick bottom and let the butter melt slowly.

Add the flour and stir with a wooden spoon until a soft mass is created. We call this 'roux'.

Let the roux bake for about 2 minutes.

In the meantime, keep stirring until it cooks evenly and does not discolour.

Now add the milk for a dash of drizzle and keep stirring.

Only add the next drizzle when all the milk has been absorbed. Now there is a nice bound base sauce.

Place the slices of floor bread on the plates.

Put some leaves of spinach, a slice of salmon and a sliced boiled egg in each slice.

Stir the cheese through the sauce and season to taste with salt and pepper.

Pour the sauce over the eggs and serve immediately.
