Directions

  1. Remove the hard stalks from the spinach and wash them thoroughly in plenty of cold water.
  2. Dry the spinach (in portions) in the salad spinner.
  3. Puree the yogurt with the lemon juice and the fresh mint leaves into a dressing with the hand blender.
  4. Season with salt.
  5. Mix the spinach, rocket, chopped onion, nuts (walnut, almonds, cashew), diced feta, chopped apricots and chopped beetroot in coarse pieces.
  6. Spoon the dressing over the salad.
  7. Grate the Parmesan cheese over it and drizzle the salad with olive oil and cress.
