Minced aubergine dish

Boil the vermicelli for 3 minutes in plenty of water. Drain and mix with the olive oil.

Cut the aubergine into cubes of 1 x 1 cm (brunoise). Cut the onions.

Preheat the oven to 190 ° C.

Heat the oil in a frying pan and fry the onion for 2 minutes. Add the eggplant and oregano and cook over a high heat for 5 minutes.

Add the mince and cook in 4 min. Until done.

Add the tomato cubes and let the sauce with the lid on the pan stew for 15 minutes. Season with (freshly ground) pepper and possibly salt.

Mix the vermicelli through the sauce and scoop in the baking dish.

Cut the brie into slices and spread over the minced aubergine dish. Bake 10 minutes in the oven.
