Minestrone soup with tomato crostini
A tasty Italian recipe. The vegetarian main course contains the following ingredients: broccoli, olive oil, winter carrot (in cubes), leeks (in rings), green beans (broken), vegetable stock (from tablets), white beans ((370 ml), drained), shell paste, green pesto and Grana Padano (cheese) (grated).

Divide the broccoli into small florets and the stalk into pieces.

Heat the olive oil in a soup pan and stir fry all vegetables for 2-3 minutes.

Add the stock, the white beans and the pasta and bring to the boil.

Cook the minestrone gently in 15 minutes.

Season the minestrone with the pesto, salt and (freshly ground) pepper.

Warm the soup for a moment.

Serve the minestrone in deep plates and sprinkle some cheese over it..
