Minestrone with shrimps


Italian pasta soup with beans, spinach and shrimps.

Directions

  1. Cut the onion into half rings, the carrot into cubes of 1 x 1 cm (brunoise) and remove the stalk of the green beans.
  2. Heat the oil in a large soup pot. Fry the onion, carrots, green beans and tomato paste for 5 minutes on medium heat.
  3. Add the water and the bouillon tablets and bring to the boil. When the soup boils, add the beans and pasta. Cook over medium heat for 10 minutes.
  4. Add the spinach in parts. Add the shrimp and bring to the boil again.
  5. Cook the soup until the shrimps are pink and cooked. This takes about 3 minutes. Season with pepper and salt.
  6. Spoon the soup into 8 bowls and garnish with the dill.
