Mix the sambal with the garlic, the ketjapmarinadeen the oil and scoop the pieces of steak through it. Leave to marinate in the refrigerator for at least one hour.

Meanwhile, place the skewers in a glass of water.

Peel the mango and cut the flesh into the same sized cubes as the meat. Thread the meat alternately with mango and place the sticks on a baking sheet.

Preheat the oven grill. Fold the tortillas double and cut out as large a circle as possible to create two equal circles.

Pack them in aluminum foil and place them in the oven. Roast the meat skewers in about 2 minutes per side under the grill. Spoon the arugula with the oil.

Place the warm tortillas on a dish and spread the arugula over it.

Place the skewers on this and serve immediately in a napkin. The tortilla also serves as a plate.
