Clean the mushrooms. Cut the mushrooms with a sharp knife into very thin slices. Squeeze the juice out of the lemon.

Spoon the mushrooms with the lemon juice and leave them for 5 minutes. Pick the hard pieces from the bottom of the lamb's lettuce.

Spoon the mushrooms with the lemon juice with oil, season with salt and pepper.

Divide the lamb's lettuce over plates, scoop the mushrooms and drizzle with oil.
