Mushroom curry
Perfect for the winter months and vegetarians! Try this great mushroom curry.

Wipe or brush the mushrooms and halve them if necessary.

Clean the garlic.

Halve the peppers and remove the seeds.

Mash the peppers, coriander, curry paste, garlic, peeled onion, coconut milk and salt to taste with a hand blender or in a food processor.

Heat the butter or oil in a pan, add the mushrooms and fry until golden brown in 3 minutes.

Pour the spiced coconut mixture over it and simmer with the mushrooms without the lid on the pan for about 10 minutes.

Serve the mushroom curry in single containers and garnish with bay leaves.
