Mushroom soup


French soup with mushroom melange, onion, garlic, fresh thyme, white wine, chicken broth and crème fraîche.

Directions

  1. Wipe the mushrooms with kitchen paper or a special soft brush.
  2. Cut the mushrooms into pieces. Chop the onion and garlic.
  3. Fry the mushroom mixture, onion and garlic in a soup pot for 5 minutes in the olive oil.
  4. Add the thyme, wine and stock to the vegetables, bring to the boil again and then turn down the heat.
  5. Let the soup simmer for 5-7 minutes until the mushrooms are soft.
  6. Puree the soup with the hand blender.
  7. Put the soup back in the pan, mix with the crème fraîche and heat well.
  8. Season with salt and pepper and spoon the soup into deep plates or soup bowls.
