Ingredients
- 100 milliliters whipped cream
- 100 milliliters creme fraiche
- 50 milliliters mayonnaise
- 1 teaspoon tomato paste
- 1 teaspoon tomato ketchup
- 1 tablespoon sherry
- 1 tablespoon White wine
- 2 orange
- 4 leaf red lettuce
- 200 gram cooked mussel
- 2 salted herring in wide strips
- 1 avocado peeled, into cubes

Directions

Beat the whipped cream almost stiffly. Fold in the mayonnaise, the tomato paste and the sherry and add salt and pepper.

Peel the oranges thick, keep a few thin orange peels for garnishing, and cut the wedges between the skins.

Put a salad leaf in every cut or glass.

Arrange the mussels, the herring bars, the orange wedges and the avocado cubes.

Pour a little dressing over and garnish with an orange peel.
