Preheat the oven to 200 ° C. Place the dough sheets side by side on the baking sheet. If you use a vanilla pod, remove the marrow from the stick. Mix the butter with almond and vanilla to a cream. Brush the dough with it and leave 2 cm of the dough edges free.

Halve the nectarines and remove the seeds. Cut the flesh, possibly with skin, into thin slices and arrange them on the dough.

Sprinkle the sugar over the nectarines. Fry the galettes for 15 minutes in the middle of the oven.

Heat the jam without cooking. Remove the baking sheet from the oven and brush the galettes with warm jam.
