Smother the onion gently in a little butter and add the washed nettle leaves (or spinach leaves) after 3 minutes. Remove the pan from the heat after 5 minutes and puree everything with the hand blender.

Let the butter melt gently in another pan. The butter may not brown. Add the flour while stirring with the whisk. Then add the stock. Keep stirring to prevent lumps.

Add the vegetable puree and mix everything together. Season with salt and pepper and stir in the cream.

Pour the soup into the soup cups and garnish with the bacon and mint leaves.
