Fried tortelloni with salsa
Deep-fried fresh tortelloni con formaggi e nocci with roasted peppers, garlic garlic chives, basil and balsamic vinegar

Put tomatoes in, immerse in boiling water and dull. Cut tomatoes in four, remove seeds and cut flesh into cubes. Cut peppers into small cubes. Cut chives finely and cut basil into thin strips.

Scoop together tomatoes, paprika cubes, chives, basil, vinegar and olive oil. Season with salt and pepper. Leave at least 1 hour.

Heat in oil frying pan to approx. 180 ºC. Meanwhile, cut rocket salad into large pieces and spread over four plates. Fry tortelloni in 2 to 3 servings in oil in approx. 2 minutes golden brown. Drain with colander paper in colander.
