No bake cheesecake with red fruit


Cheesecake made of white chocolate, cream butter, lime, basil, monchou, whipped cream, sugar, strawberries and raspberries.

Directions

  1. Line the bottom of the spring form with baking paper.
  2. Melt the chocolate au bain-marie. Meanwhile, crush the biscuits coarsely and scoop through the melted chocolate.
  3. Spoon the mixture into the spring form, spread over the bottom and let stiffen in the refrigerator in about 20 minutes.
  4. Meanwhile, grate the green skin of the lime. Squeeze out the fruit. Remove the leaves from the basil.
  5. Put the basil and the fresh cream cheese in a high cup and puree with the hand blender to a smooth green mass (you may see some pieces of basil).
  6. Put the whipped cream, sugar and lime zest in a different bowl and beat with a hand mixer thick but still just liquefied.
  7. Add the fresh cream cheese mixture and mix gently.
  8. Remove the bottom from the refrigerator and scoop the mixture. Let the cheesecake stiffen in the refrigerator for 1½ hours.
  9. Clean the strawberries and mix carefully with the 1/2 rasp lime juice through the raspberries.
  10. Take the cheesecake out of the fridge and spread the fruit in a small pile over it.
