Noodle soup with bok choy, ham and omelet rolls

Prepare the noodles according to the instructions on the package.

Drain and rinse cold water.

Heat 1 tablespoon of oil in a soup pot and fry the shallots and garlic for 1-2 minutes.

Pour in the stock and bring to the boil.

Add the paksoi and cook for 2-3 minutes.

In the meantime, beat the eggs with 2 tablespoons of water and season with salt and pepper.

Heat the rest of the oil and fry a thin omelet.

Roll the omelet, if it is still warm, as tight as possible and cut narrow rolls.

Scoop the egg with the celeriac and ham strips through the soup.

Divide the noodles over bowls and scoop up the hot soup.
