Noodles with broccoli, cashew nuts and pieces of chicken
Vegetarian pieces à la chicken with nuts, broccoli and noodles.

Prepare the noodles according to the instructions on the package.

Heat a frying pan without oil or butter and roast the cashew nuts in 4 min. Over medium heat until golden brown. Remove from the pan and allow to cool on a plate.

Cut the fresh mint fine and the lime into segments.

Divide the broccoli into small florets, peel the stalk and cut into pieces. Boil for 3 minutes in a large pan of water.

Drain the broccoli and drain well.

Meanwhile, halve the mushrooms. Heat the oil in a stir frying the mushrooms and chicken steaks for 3 minutes on a high heat.

Add the soy sauce, noodles and broccoli to the chicken and mushrooms and fry for 2 minutes.

Spread over deep plates and sprinkle with the cashew nuts and mint. Put a wedge of lime in it.
