Bring the almond drink to the boil in a small pan with the oatmeal and a pinch of cinnamon. Cook for about 3 minutes.

Take the pan from the heat source. Finely chop the mint leaves and add. Season with honey.

Sprinkle the apple pieces with lemon juice and add to the oatmeal.

Allow to cool for about 1 minute and sprinkle with a handful of chopped almonds.
