Bring about 6 cm of water to the boil in a low pan. Add the vinegar. Turn down the heat just before the water boils.

Make a vortex with a spoon. Break 1 egg in the middle of it and poach for about 3 minutes. Scoop out of the pan with a slotted spoon and drain.

Also poach the rest of the eggs. Serve in leaflets lettuce with pepper and salt to taste.
