Omelette with minced meat and cavolo nero
Omelette, made from egg, milk, Tuscan sausages, cavolo nero, lemon and hummus.

Beat the eggs with the milk and season with pepper and salt.

Heat per omelette 1/2 tbsp oil in a frying pan with non-stick coating and bake the omelette as many omelets as you need. Keep warm under a lid on a plate.

In the meantime, remove the skin of the Tuscan sausages.

Grate the yellow skin of the lemon and press out half.

Heat the oil in a stirring stir fry the sausage meat in 3 minutes.

Add the cavolo nero and cook for another 8-10 minutes. Season with the lemon zest, lemon juice (1 el per 4 omelets), pepper and salt.

Brush the omelets with the hummus and spread the vegetable mixture over it. Fold double, cut diagonally and serve immediately.
