Cut the onions. Heat the olive oil in a large pan and fry the onions in a gentle glass for 4 minutes. Add the orange juice and heat the onions over a high heat for 3-4 minutes until the moisture has almost evaporated.

Add thyme, mustard, some freshly ground black pepper and jelly sugar. Heat everything while stirring until the mixture boils well bubbling. Let everything boil for 4 minutes until it gets the thickness of marmalade.

Put the onion marmalade in the pots, close the pots and put them upside down for 5 minutes. Then set the pots straight again and let the marmalade cool down. Stick labels with the name and preparation date.
