Onion soup with tortellini (pasta), thyme and Parmesan cheese.

Directions

Slice the onion in thin rings and the garlic fine. Heat the butter and oil in a soup pot.

Add the onions, garlic, thyme leaves, sugar and pepper.

Bake for 15 minutes on medium heat until the onion begins to caramelize. Stir frequently.

Add the stock. Bring to the boil, stir and cook on low heat for 30 minutes.

Season with pepper and salt and add the pasta. Cook in 15 minutes.

Saute, as soon as the pasta is al dente, some Parmesan cheese over the soup.
