Orange couscous with mint dressing


A tasty recipe. The vegetarian side dish contains the following ingredients: couscous (pack a 500 g), celery (with leaf), orange, extra virgin olive oil, garlic (squeezed), fresh mint ((a 15 g bag), finely chopped), cinnamon powder and hazelnuts ( blank (bag a 75 g)).

Directions

  1. Put the couscous in a bowl and pour 500 ml of boiling water on it.
  2. Well the couscous 5 minutes.
  3. Remove the stiff wires from the celery with a peeler and cut the top 10 cm of the stalks.
  4. Keep the tops separate.
  5. Cut 2 celery stalks into cubes.
  6. Clean the orange, grate the peel and squeeze the fruit.
  7. Beat a dressing of 3 tablespoons of orange juice, the grater and the olive oil.
  8. Stir in the garlic and fresh mint and season the dressing with the cinnamon, salt and (freshly ground) pepper.
  9. Roast the hazelnuts in a dry frying pan until light brown, and chop them roughly on a cutting board.
  10. Stir in the couscous with a fork and spoon in the celery, hazelnuts and dressing cubes.
  11. Spoon the couscous into 8 small bowls and serve with the celery tops as spoons..
