Red cabbage salad with orange
Salad of red cabbage, orange, raisin, shallot and red wine vinegar.

Pour the hot water into a bowl and let the raisins swell for 5 minutes. Meanwhile cut the shallots into rings.

Put the red wine vinegar in a bowl and leave to marinate for 5 minutes.

Meanwhile, grate the orange skin of the clean-scrubbed oranges. Use a sharp knife to cut the skin and the white skin of the oranges.

Cut the segments of flesh from the membranes, so that you can easily pop out the flesh with your knife. Cut the flesh into pieces.

Put the sliced red cabbage in a colander and pour boiling water over it until it is just below. Spoon and drain well. Let the raisins drain too.

Spoon the red cabbage with the raisins, shallot, orange zest and pulp, sugar, thyme leaves and extra virgin olive oil.

Season with pepper and salt. Let stand for at least 30 minutes before serving.
