Directions

  1. Heat the oil in a skillet or stir fry the chicken for 5 minutes.
  2. Add sambal oelek, soy sauce, honey, salt and pepper. Stir fry the mixture for 3 minutes.
  3. Scoop the kale through the chicken mixture. Stir fry for another 10 minutes.
  4. Spoon the nuts through the kale mixture. Roast the bacon in a dry, hot skillet until crispy.
  5. Divide the kale dish over 4 plates. Sprinkle the onions and put the bacon on it. Serve mashed potatoes or fried potatoes.
