Heat 4 tablespoons of oil and fry the aubergine cubes in a few portions brown. Always remove from the pan and drain on kitchen paper.

Add the rest of the oil and fry the onion for about 5 minutes at a low setting.

Add the curry paste and stir-fry for 1 more minute.

Add the minced meat and fry it in a few minutes.

Scoop the tomato cubes through and leave with the lid on the pan at a low setting for about 20 minutes.

Scoop the aubergine through and let it boil for another 10 minutes without lid. Sprinkle with the coriander.

Delicious with white rice.
