Directions

  1. Mix the flour with a pinch of salt and milk to a smooth batter. Beat the eggs through. Stir in the spring / spring onions and freshly ground pepper through the batter. Let rest for about 10 minutes.
  2. Spoon the chicken strips with the sambal and 1 tablespoon of the oil and stir fry the chicken in a few minutes until done.
  3. Heat a little of the rest of the oil in a frying pan with non-stick coating and bake 8 large pancakes.
  4. Spoon the bean sprouts through the chicken and spread over the pancakes. Fold the pancakes double and sprinkle with the peanuts and coriander.
