Spoon the pancake mix, turmeric, coriander powder and 1/2 teaspoon of salt into a large bowl.

Beat the eggs with the coconut milk and stir in the pancake mix.

Let the mixture rest for about 15 minutes.

Meanwhile, put the oyster mushrooms, carrot, bean sprouts, herbs and chicken in separate trays.

Stir in the sweet soy sauce, lime juice, ginger, sesame oil and sambal into a sauce.

Heat the oil in portions in a small frying pan and fry the batter 8-12 pancakes.

Fill the pancakes at the table with the ingredients from the trays and serve the sauce.
