Oriental salad of Brussels sprouts and smoked mackerel

Directions

  1. Bring a pan with plenty of water and a little salt to the boil, then add the sprouts.
  2. Let them cook gently for 8 to 10 minutes until they are al dente.
  3. Drain and rinse the sprouts with cold water until they are lukewarm.
  4. Keep them in the pan, without water.
  5. Grate the ginger and chop the garlic.
  6. In the meantime, clean the peppers and cut into very fine strips.
  7. Remove seed and seeds from the pepper and finely chop the pepper.
  8. Mix the pepper and red pepper with the garlic, ginger, oil, honey and lime juice.
  9. Taste the dressing and season with salt.
  10. Cut the sprouts in half and mix the dressing, leave to rest for 5 minutes.
  11. In the meantime, pick the mackerel into nice pieces, remove any grits.
  12. Divide the sprouts salad over 4 deep plates and spread the mackerel over it.
  13. Garnish with the coriander.
