Oven fries of sweet potato with paprika and chicken schnitzel

Directions

  1. Preheat the oven to 220ºC.
  2. Cut the peppers in half lengthwise and leave the stalk on it. Remove the seed lists.
  3. Place the peppers with the cutting edge upwards on the baking tray and roast for about 10 minutes in the oven.
  4. Cut the sweet potatoes lengthwise into 1-1.5 cm thick fries.
  5. Mix 4 tablespoons of oil with the paprika powder and a pinch of salt and scoop through the potatoes.
  6. Remove the peppers from the oven and pour out the moisture.
  7. Lower the oven temperature to 190ºC.
  8. Divide the potatoes over the baking sheet and put them in the oven.
  9. Immerse the tomatoes in boiling water.
  10. Rinse cold water over it, strip it and cut into cubes.
  11. Mix with the spring onions and sprinkle with salt and pepper.
  12. Cut half of the mozzarella into cubes and slice the rest into slices.
  13. Fill the peppers with the tomato mixture and mozzarella cubes.
  14. Put them in a baking dish, place the slices of mozzarella on them and sprinkle with the Parmesan cheese.
  15. Spoon the potatoes and put the peppers in the oven.
  16. Bake the potatoes and peppers for about 15 minutes.
  17. Prick with a knife in the fries and check if it is cooked.
  18. Meanwhile, heat 2-3 tablespoons of oil and fry the chicken schnitzels 3-4 minutes per side.
  19. Garnish with wedges of lemon.
