Directions

  1. Prepare the pancake mix according to the instructions on the package.
  2. Mix the chicken with the olive oil, Mexican herbs, garlic, red pepper, lemon zest and juice. Fry the chicken strips on a medium height light brown.
  3. Add the pepper and onion and cook for 2-3 minutes. Put the corn and pineapple through and keep warm.
  4. Heat a little oil in a frying pan and fry pancakes in the batter. Spread the chicken mixture over plates and sprinkle with the coriander and coconut grater. Serve the pancakes.
