Directions

  1. Mix the self-raising flour with cocoa powder and sugar.
  2. Beat the milk with the eggs and the melted butter. Pour this mixture into a dimple of the flour and pat it smoothly. Cover and set aside for about 15 minutes.
  3. Beat the egg whites in a fat-free bowl half stiff. Fold them in portions lightly through the batter.
  4. Always heat a little oil in a frying pan and fry the pancakes. Cover the baked pancakes with a tea towel and put baking paper in between against sticking.
  5. Preheat the ingredients for the fudge without stirring until the mixture thickens. Serve the pancakes with the fudge and sprinkle with icing sugar.
