Directions

  1. Put the pancake mix in a mixing bowl and add 500 ml of milk. Stir with a whisk or mixer until smooth.
  2. Add the rest of the milk, eggs and oil or butter while stirring. Let a skillet get hot.
  3. Pour some batter into the pan, let it run over the bottom and fry the pancake on both sides until golden brown.
  4. Spread the pancake with 1 tablespoon of honey. Cover with some arugula, goat cheese and walnuts. Sprinkle with the thyme and roll up the pancake.
