Passion fruit role
A tasty recipe. The vegetarian dessert contains the following ingredients: eggs, powdered sugar, patent flour, cornstarch, passion fruit (halved (or 150 g raspberries)), fresh mint ((15 g), the leaves chopped) and mascarpone (cheese).

Preheat the oven to 175 ° C.

Bring a layer of water to a boil in a pan.

Break the eggs in a heat-resistant bowl, hang them over the pan with hot water (the bowl must not touch the water).

Clamp the bowl and turn the heat down.

Add a pinch of salt and 125 grams of icing sugar to the eggs.

Beat for 10 minutes with the mixer until a thick, airy cream.

Remove the bowl from the heat, strain the flour and cornstarch above it and quickly fold it through.

Spoon the mixture onto the baking sheet covered with parchment paper and spread it out to a rectangle measuring 30 x 35 centimeters.

Fry the whole in 10-15 minutes until lightly browned and done.

Remove the dough from the oven and place it upside down on the counter (top should be outside).

Wait 2-3 minutes, roll the dough and let it cool.

Roll out the cooled dough carefully.

Mix the fresh mint with the mascarpone and divide this over the dough.

Spoon the passion fruit empty, scoop the flesh on the mascarpone and roll the dough again.

Sprinkle with the rest of the icing sugar..
