Bring a large pot of water with salt to the boil. Grind the walnuts with the arugula, the thyme leaves, the garlic and the olive oil to a smooth paste and season with salt and pepper. Stir in the Parmesan cheese.

Cook the penne according to the instructions and pour it off. Rinse under cold water until they are lukewarm and pour the pesto through.

Spread over tall glasses or dishes, put a sprig of thyme in it and serve with a fork.
