Cook the pasta al dente. Drain and rinse cold water. Let it drain well.

Heat the oil and fry the chicken breast golden brown.

Add the mushrooms and cook for 3-4 minutes. Season with salt and pepper.

Remove the chicken mixture from the pan.

Roast the pine nuts in the hot pan until golden brown and set aside.

Mix the chicken breast, mushrooms, to, rocket and pesto through the pasta.

Sprinkle with the pine nuts and grated cheese.
