Pasta salad with chorizo and mozzarella
Salad of penne with chorizo, parsley, balsamic vinegar, Italian herbs, olives, grilled red pepper, tomato and mozzarella.

Cook the pasta according to the instructions on the package and rinse under lukewarm water.

In the meantime, remove the skin from the chorizo. Halve the sausage in the length and cut into thin slices.

Heat a frying pan without oil or butter and fry the chorizo for 5 minutes on medium heat. Drain on kitchen paper. Keep 2 tablespoons of cooking fat (for 4 people) behind.

Meanwhile, cut the parsley fine.

Mix the retained shortening with the parsley, balsamic vinegar and Italian herbs into a dressing. Season with pepper and salt.

Let the olives and peppers drain. Cut the peppers into cubes. Halve the tomatoes.

Mix the pasta with the dressing, chorizo, olives, paprika and tomato. Spread over a bowl and tear the mozzarella into pieces.
