Asli's asian rice dish with omelette and broccoli


Rice dish of basmati rice with red pepper, spring onion, coriander, garlic, egg, broccoli, soy sauce and mushrooms.

Directions

  1. Boil the rice according to the instructions on the package. Allow the rice to cool well.
  2. In the meantime, remove the stalk from the red pepper. Roll the pepper between your hands so that the seeds fall out and cut into thin rings.
  3. Cut the spring onion into rings. Chop the coriander roughly and press the garlic cloves.
  4. Cut the largest pieces of broccoli and cook for 2 minutes. Drain and rinse with cold water.
  5. Meanwhile, heat the oil in a wok pan and fry the garlic. Add the soy sauce and stir-fry the chestnut mushrooms for 3 minutes.
  6. Add the rice and broccoli and scoop well. Add half of the spring onion, scoop and turn off the heat. Spoon the rice on a large scale.
  7. Break the eggs over a bowl. Season with pepper and salt. Stir the eggs with a fork or whisk.
  8. Heat the oil in the wok pan. Add the beaten eggs and spread the rest of the mushrooms over it. Bake 4 min. Turn halfway.
  9. Cut the omelette into seven equal pieces and spread over the rice.
  10. Garnish with the rest of the spring onion, coriander, red pepper to taste and drizzle with a little soy sauce.
