Pasta with ham and zucchini

Remove the end of the courgettes and cut the zucchini into small cubes.

Heat the olive oil in a frying pan and fry the onion rings and zucchini cubes for four minutes until they soften slightly.

Meanwhile, bring a large pot of water over the pasta with some salt to the boil.

Sprinkle the Italian herbs and some salt and pepper over the onion-zucchini mixture and add the tomato cubes with the juice.

Stir well.

Bring to a boil over medium-high heat and let the vegetable sauce simmer for 12 minutes.

Add a little water if it is too dry.

Add the pasta to the boiling water.

Stir once and cook the pasta over medium heat without a lid in ten minutes until al dente.

Cut the slices of ham into long strips of a cm wide.

Stir in half of the strips through the vegetable sauce and continue to heat.

Pour the pasta into a colander and allow the pasta to leak out for a short while.

Spoon the pasta into deep plates and spoon the vegetable sauce over it.

Sprinkle the grated cheese over it and spread the remaining strips of ham on top.
