Directions

  1. Remove the end of the courgettes and cut the zucchini into small cubes.
  2. Heat the olive oil in a frying pan and fry the onion rings and zucchini cubes for four minutes until they soften slightly.
  3. Meanwhile, bring a large pot of water over the pasta with some salt to the boil.
  4. Sprinkle the Italian herbs and some salt and pepper over the onion-zucchini mixture and add the tomato cubes with the juice.
  5. Stir well.
  6. Bring to a boil over medium-high heat and let the vegetable sauce simmer for 12 minutes.
  7. Add a little water if it is too dry.
  8. Add the pasta to the boiling water.
  9. Stir once and cook the pasta over medium heat without a lid in ten minutes until al dente.
  10. Cut the slices of ham into long strips of a cm wide.
  11. Stir in half of the strips through the vegetable sauce and continue to heat.
  12. Pour the pasta into a colander and allow the pasta to leak out for a short while.
  13. Spoon the pasta into deep plates and spoon the vegetable sauce over it.
  14. Sprinkle the grated cheese over it and spread the remaining strips of ham on top.
