Patlican karniyarik (stewed aubergines on turkish)


A nice Turkish recipe. The main course contains the following ingredients: meat, aubergines, oil, butter, minced beef, onion (grated), tomatoes (of which 3 chopped), fresh parsley (leaf and chopped).

Directions

  1. Wash the aubergines and cut off the stalk.
  2. Use a peeler to peel the lengths of the purple skin with a peeler, so that purple and white stripes of approx.
  3. 1 cm are produced.
  4. Heat the oil in a frying pan and fry the aubergines on high heat around brown.
  5. Allow them to cool down on kitchen paper.
  6. Heat the butter in a frying pan, fry the minced meat in a high heat until light brown.
  7. Spoon the onion and finely chopped tomatoes, stir everything together.
  8. Let it bake for a while.
  9. Season the minced meat mixture with the parsley, salt and (freshly ground) pepper.
  10. Cut the aubergines in half lengthwise.
  11. Place them with a cutting edge upwards in a frying pan.
  12. Spread the minced meat mixture over the aubergines.
  13. Cut the rest of the tomatoes into 8 nice slices.
  14. Garnish each aubergine with a slice of tomato.
  15. Pour 150 ml of water to the aubergines in the pan.
  16. Let them cook over the pan over low heat in 25-30 minutes with the lid on.
  17. Delicious with rice and a salad of cucumber and feta with a yoghurt dressing..
