Fish platter with roasted vegetables
A nice Mediterranean recipe. The main course contains the following ingredients: fish, pangasius fillet, garlic, tapenade of sundried tomatoes (140 g), zucchini (in long slices), yellow pepper (in long strips), red onion (in parts), tomatoes (in parts) and olive oil.
Preheat the oven to 225 ºC. Rub the pangasius fillets with salt and pepper and place them side by side in the oven dish. Squeeze the garlic, mix with the tapenade and brush the fish. Slide the dish into the oven and let the fish cook for 15 minutes.
Spread the zucchini, paprika, onion and tomato thinly with oil and roast them in a hot grill pan in 4 min. Nice brown and al dente. Spoon the vegetables on a plate, sprinkle with salt and pepper and serve with the fish. Delicious with mashed potatoes.
