Patties with green asparagus agout, tarragon and peas
Puff pastry trays with ragout of green asparagus, peas, watercress and fresh tarragon. Tasty as an appetizer or snack with the drink.

Preheat the oven to 165 ° C and prepare the patties according to the instructions on the package.

Allow the bouillon tablet to leach into the water and hold against the boil.

In the meantime, remove the woody underside of the asparagus and cut into 3 equal pieces.

Slice the leaves of the tarragon.

Melt the butter on low heat in a (stalk) pan and add the flour.

Let stir in 3 minutes (roux).

Add the stock while stirring with a whisk and bring to the boil.

Add the garden peas, asparagus and tarragon and cook for 5 minutes on low heat. Season with freshly ground pepper.

Remove the hard stems from the watercress.

Divide the ragout over the patties and serve with the watercress.
