Pour the apple juice over the fruit. Heat the oven grill. Beat the egg whites with the sugar in a fat-free bowl.

Halve the peaches or nectarines. Remove the seeds, peel the fruit and cut the flesh into segments. Divide the peach with the raspberries over the ovenproof dishes.

Scoop this foam over the fruit and place it (not too close) under the grill until the foam turns light.
